Recharge Time...
Lost in an absolute flurry of e-mails these days. No less than 40 per day! OH MY! That's about 30 past my preferred limits, lol. The things we do for love...
Desperate to recharge my batteries, this baby packed a punch!
Pack-A-Punch
Blend:
1 cup spinach with 1 cup almond milk
Get out all the bumps and lumps and blend until smooth.
Add:
1/2 frozen banana
1 cup strawberries (I used frozen but fresh is fine)
2 Tbsp flaxseed
1 tsp sweetener of your choice
Blend, enjoy, recharge!

Or no purpose at all...
Insomnia, my evil, evil mistress. Maybe you have no purpose at all. Other than to keep me awake. And CRANKY. OY.
Edgy Mommy here today I say. On edge all weekend letting things that should not bother me get to me. Ack. We sure are hard on ourselves.
Scale was down again this week (ok, that's a plus!) but I'm also seeing the fruit and veggie prices go back up. C'MON!! It's not even August yet! Alas, I am following the sales and buying only what I need, when I need it. Waste not, want not.
Raspberry Banana
Seems simple enough, doesn't it? The combination tickles the senses!
1 cup raspberries
1/2 frozen banana
1 cup almond milk
100g raspberry Greek yogurt
1 Tbsp flax seed
Ice as needed Blend, blend, blend
Blend on my friends and I DO hope you are resting well. An important part of weight loss, lost on me!! Sweet dreams!

It Would Appear Insomnia Has A Purpose....
1:26am - head is swimming with things-to-do, things-to-see, things-to-sort. Ack. Do you suffer from insomnia? It's a really troublesome affliction of mine that comes (too often) and goes (not often enough) without rhyme of reason. Not fun.
Will get a head start I suppose at planning my day tomorrow and of course, my meals. I made a delicious veggie lasagna last night but sadly forgot to photograph it! I KNOW! Bad me! The ENTIRE PAN was around 6 points! Umm..yeah!
Veggie Lasagna
1 small eggplant
1 large zucchini
2 fresh tomatoes
1 med onion, diced
1 cup mushrooms, sliced
1 cup 1% cottage cheese
4 Tbsp parmesan cheese
1 large can tomato sauce
1. Start by slicing eggplant and zucchini into thin slices (I used my mandolin)
2. Fry onions and mushroom in cooking spray until soft
3. Slice tomatoes
Layer in a lasagna pan in the following order;
a) Coat bottom with thin layer of tomato sauce
b) 1 layer eggplant
c) 1 layer zucchini
d) 1 layer tomatoes
e) 1 layer tomato sauce
f) 1 layer of cottage cheese
g) Top with mushroom/onion mixture
h) 1 layer eggplant
i) 1 layer zucchini
j) 1 layer tomatoes
k) 1 layer tomato sauce
Top off with parmesan cheese, cover with foil and bake at 375 degrees for 40-60 minutes. GREAT reheated and hits the spot! Eat it without feeling guilty. Enjoy!

On The Fly!
What a bad blogger I have been! CRAZY busy times and absolutely LOVING it! I long for these types of days/weeks, I cannot lie. Nothing I love more than decorating the world!
But since I have been so neglectful with the blog I will post two recipes today!
Spinach Dip. I LOVE spinach dip. But the recipes we often find online or have been making for years are full of nasty fats. Well no more!
Low Fat Spinach Dip
Ingredients needed:
1-10 oz container of frozen chopped spinach – defrost and squeeze out all the juice
1- 5 oz cans of sliced water chestnuts – dice into small pieces
1 - 8 oz container of 1% cottage cheese – blend with a handheld blender or in a traditional blender until smooth and creamy
1 packet ranch dressing
After completing the above tasks, mix well, eat, and enjoy! No baking or cooking needed.
Watermelon Frost
1/2 cup frozen watermelon (in large diced cubes for easy blending)
3/4 cup frozen strawberries
1/2 cup coconut water (or plain water)
*add slowly as needed to get blender moving – add more if needed
1/2 banana
1/2 lime, squeezed
1-2 tsp honey (to taste)
ice optional
Blend in high speed blender – add ice for a frostier sip. Serve.
That may be as good as I get today :-) Be healthy and be kind. Take care xo

Baby It's....
Hot outside! I've always disliked it when people state the obvious but I'm making an exception today cause "BABY! It's hot outside!" Which is also a good thing cause it's perfect smoothie weather!
It's been an emotional week. Very emotional and I won't get into it out of respect for the person who went through it but I am THRILLED to say everything is going to be JUST FINE. HUGE sigh of relief.
I was good though and didn't succumb to the normally prevalent emotional eating so I am really, really happy about that. Progress. Yes. But in all honesty I would have eaten an entire cow and the whole cheesecake factory to make sure she would have been ok. Not necessary however, all is GOOD ;-)
On the smoothie front, fell across this gem yesterday and just HAD to share:
Credit: Raw For Beauty
Sweet Summer Smoothies! For the bottom, blend 2 bananas, 2 nectarines, 1 mango, and water and ice as needed. For the top blend 1 cup Cherries and 1 cup blackberries. Toss in some chopped strawberries for added sweetness!
Isn't that beautiful?! Off to buy nectarines to get this beauty into motion.
Enjoy your day, stay cool and be good to yourself xo

Bored. Bah!
8:46pm on a Sunday night. What to do? Zilch, nil, nada, nothin'. Good news: Had a fabulously relaxing weekend, stayed true to myself and the plan (woot!) but now I am chockfull of energy and have nothing to do, lol. Bah!
I must share breakfast however because it was FABULOUS! I was on the run and not feeling overly inspired but then, it hit me! Grab a little this, a little that, cross your fingers, blend and enjoy. It worked out well! Not sure what to call this gem (will DEFINITELY be doing it again) so if you can suggest a name for it, please share!
Not Sure What To Call This Gem
1/2 cup frozen mandarin oranges
1/2 cup frozen black cherries
100g Liberty Greek Lemon yogurt
1 cup coconut water
Blend & blend. This was beyond good. Borderline out of this world. Really. Try it!
My MIL brought me back all kinds of fabulous olive oils from her recent trip to Italy. Cannot wait to try them. AND they come with little spritzers. Isn't that awesome?! No chance of overusing them, spilling them or just plain old puttin' too much on. Love it! Truffle, fig, balsamic, berry infused GEMS. Will post a pic tomorrow. Sexy looking too. WOOT!
So here's a question? How many of you are doing the old WW plan like me? I'm asking because if you are not and want to try it, I'll post the links to get you all the info you need. Just let me know and I'll work on that this week. Ok? I just love it and could never imagine switching it up at this point but that's me. Do what works for you.
Be kind, be safe, get blendin'. Until tomorrow....

Wake-Up Call
7:00am - Already been up 2.5 hours and I'm in coffee overload. Another jam packed day on the design front then a basketball tournament starring my little one. NEED BOOST.
Wake-Up Call
1/2 cup frozen pumpkin
1/2 cup frozen pineapple
100g Liberty 0% Pineapple Greek Yogurt
1 cup Coconut Dream Milk
Large dose Cinnamon
Water, to thin
Blend, blend, blend. This is a THICK one if you are using frozen pumpkin and pineapple. If using fresh, you'll need ice and not water to get that delicious smoothie consistency.
This is chock-full of goodness and will tide me over easily until lunch time (homemade pea soup!)
Weigh-In this morning: Lost a respectable .6lbs. Woot! Have a greeeeeaaat day folks! Do something special, just for you ;-)

Batching - 2
Batch cooking continued after I left you. AND I realized I forgot to show you last night's dinner.
Fajita Chicken Salad
Bed of lettuce, Spanish onions and fresh tomatoes
Top with 1/2 cup of 1% cottage cheese
Add 4 oz chicken breast (cooked in salsa spices and shallots)
Add a dollop of salsa and 3 Tbsp grated cheddar.
This was very filling but more importantly, SATISFYING. So good. Try it, you'll love it!
I made up a large batch of "Cream" of Carrot Soup as well. Pleasantly surprised at how easy it was to turn carrots into a creamy, light and delightful soup. And could not be easier. Really, I winged it. But winged it successfully!
"Cream" of Carrot Soup
6 cups water
1 large bag of baby carrots
Boil, boil, boil. Don't be shy. Boil down until only 2 cups of water are left (approximately).
Add:
4 cups of chicken or vegetable bouillon
Mix
Scoop out contents a little at a time and blend. It should be well blended with only a few pieces of carrots interspersed.
Add:
Garlic and/or garlic powder to taste
1/4 tsp paprika
1 cup Coconut Dream milk (this is what makes it creamy and delicious!)
Mix thoroughly and enjoy. This made approximately 5 servings and I can't wait to eat each and every one of them! DELISH!
I topped it off with a pinch of lemon dilly seasoning and orange zest to "pretty it up".
Bonus: The entire pot is only 1.2 points! LOVE it!

In a fit of despair...(where is it? why can't I find it? I know I have it...) I also took on the dreaded top freezer. I mean SERIOUSLY! Why can't my family keep it clean and organized (they apparently have NOT inherited this gene)? So we went from this:
Can't find ANYTHING!!!
To this:
Not perfect but I can breathe. Check out smoothie grand central in the door, lol. Much easier to manage. Have a fabulous day and be safe out there!Wednesday, July 10, 2013
Batch Day!
Batch what? Huh? Batch cooking and prep day of course! If you are just starting a smoothie regimen or are considering abandoning it, this may change your mind! It's all in the prep!
I tend to buy my frozen fruits already bagged, like this and that's a good thing!

But not everything is readily available. It took me all of 31 minutes (yes 31, not 30) to prep and prepare the following;
1. Bananas
2. Pineapple (canned and split into 1/2 cup portions)
3. Pumpkin (canned and split into 1/2 cup portions)
4. Fat burning Dahl soup
5. Zucchini chips
6. Baked pumpkin squash
7. Chocolate Fig Smoothie
8. Lemon Ginger Smoothie Base

Ok, so my 12yr old takes one look at the pumpkin squash.
Him: What's that?
Me: Pumpkin squash. I baked it to bring out the flavor.
Him: It looks like butt.
Me: What do you mean it looks like butt?
Him: Just look at it. It looks like someone's butt.
Me (trying not to laugh out loud): I can assure you that it's not anyone's butt. It's a vegetable.
Him: I don't care what you call it. Now that I've seen it, I 'm not eating it. It's someone or something's butt. I mean it.
Can no longer hold it in - I am laughing out loud now.
Me: You could be right, I may have been fooled, butt indeed.
Him: Enjoy then.
All righty, the butt (aka pumpkin squash) is all mine. No complaints here.
So here's what I know for sure. No eating plan or regimen is easy. It takes work. We all fall, we all get up, fall and get up again. As long as you keep getting up, you are ok in my books ;-) The key to any plan (I think) is to plan, prep, plan, prep then execute. All the deliciousness took 31 minutes out of my day. NOT the end of the world. The key is to schedule the time and do it. No excuses, no backing down, just do it! Before you know it you have fabulous, healthy food all ready to go (and blend!)
Oh! Before I forget...breakfast! This was it!
Chocolate Fig Blend
1 cup unsweetened Chocolate Almond Milk
3 Figs
Blend, blend, blend
Add:
1 Tbsp. flaxseed
1/2 frozen banana
6 ice cubes
Blend, blend, blend and ENJOY!
Now my batch cooking is not done for today. Had to stop and order tile and stone for my next project - it's going to be a beauty!
YES! There will be one of our famous slate accent walls - WOOT!
So I am off to make "Cream" Of Carrot Soup. Catcha later! Be kind to your body and yourself xo

Green Goodness!
Goodness abounds these days which means gratitude does as well! So easy to forget just how fortunate we are sometimes. A little gratitude goes a looooong way! I am full of it!
Officially, officially signed a new contract this morning (WOOT!) - it was awarded yesterday but today was the formal "you're the one" - oooooh I love that feeling!
Rushed out early this morning to finalize so no breakfast for me (Bad Tracy!) but lunch is jammed packed full of goodness so I forgave myself ;-)
DON'T DON'T DON'T let the color throw you off. It's soooo delicious!
Green Goodness
3 large handfuls spinach
1 cup coconut water
Blend until smooth.
Add:
1 Granny Smith Apple, chopped
1 Tbsp. cinnamon
1 packet of Splenda (or other sweetener)
Ice
Blend until smooth and delicious.
Seriously, forget the color - get passed it, look away, do what you have to do. This is SO GOOD. Enjoy and be good to yourself :-)

Best Day!
The Dude and I were in desperate need of a day off. A REAL day off. No checking for messages, not redesigning the world, no distractions. And we needed it badly. A day for family, a day for each other.
There would be water involved and I needed the dreaded (horrible, terrifying) bathing suit. Off we went as last year's was not only hideous but much too big for me now (yay!). Found one I LOVED but they didn't have my size (of course) but 90 dreaded minutes later I hit the jackpot (if you can call it that). I was content.
So we debated...waterpark (did I REALLY want to be seen in a bathing suit for 8 hours? Umm, no.), Parc Safari or Granby Zoo? Granby won and what a great day it was!! There was water involved but my fears were groundless. I was not the most pitiful person there. By a long shot. If you're ever feeling bad about yourself, visit a waterpark. All shapes and sizes in all their glory. Beautiful, large women in APPROPRIATE bathing attire and others, not so much. Clearly people are more daring than I am. OY!
I also made a deal with myself before leaving. I would NOT be THAT person. THAT person who takes the photos but doesn't get in them. I did NOT want to be that person. So I wasn't. I was silly, I was giddy, I was IN there, I was HAPPY. So suffer through my shots...

Silly, happy and exhausted - take your pick.
I have to tell you that when you throw your insecurities to the wind, it's freeing! New motto: Throw insecurities to the wind!!
Today's Treat! Avocado & Pear! Woot!
Avocado & Pear Smoooooothie (real smooth!)
1/4 avocado
1 whole pear
1/2 cup Coconut Dream
3/4 cup water
Ice, Ice, Baby!
Smooth, delicious and oh so filling!
Enjoy and be good to yourself! xoxo

Well Go Figure...Again!
Registered a 1.8lb loss this week. IT'S A MIRACLE!

Muhahhaha! That's what a miracle looks like-->
But seriously...summer is HARD. Hectic schedules, kid's activities, time with friends, backyard parties...seriously!!
Despite an abundance of fresh and delicious fruits and veggies, there are big, fat juicy steaks and burgers, potato salad (calls my name ALL the time!), pasta salads, desserts....what's a person to do? Wish I had the answers. Do you? So far, moderation (to a degree) has been key. Easy? Hell no! I LOVE food. So yeah, it's a struggle. Being on maintenance I have been able to give myself a few liberties. A few. And I mean, only a few. Want that steak? Have it. BUT be careful with the rest of your day. That burger? HAVE it. But watch the rest of your day. See? As long as you are mostly doing it right, you'll be ok. Watch your triggers. Watch your intake. Watch those binges.
Speaking of binges...have you tried these? Dangerous but oh so good! Dangerous only if it causes triggers. Otherwise, a FANTASTIC treat at 1.5 each. WOOT!
Better than a fudgesicle - better, better, better!
So breakfast was a TREAT too. A healthy, filling, lovely treat!
Chocolate Cashew Smoothie
1 cup Silk unsweetened chocolate almond milk
1/8 cup cashews
1 cup vanilla Greek yogurt
Ice
1. Pulverize cashews until smooth
2. Blend with chocolate almond milk and yogurt
3. Add ice and enjoy!
Enjoy the weekend my friends! Be kind to yourselves :-)

Horrendum Hebdomadam
Indeed! Horrendum Hebdomadam! In case you are wondering what that means...Horrible Week!
Hormones and body are completely out of whack! The joys of growing old. I'll leave it at that, lol. In the meantime, it's definitely time to revamp my brain, my thoughts, my goals and that's what I'm going to do. Bear with me.
It's hot and HUMID out there so this should do the trick! Enjoy! Not a meal replacement but you can definitely sip on this all day long and enjoy it's refreshing taste and energy boost!
Watermelon Slush
2-3 cups fresh watermelon
1/2 lemon, peeled
1 singles packet of sugar free lemonade (I use Arizona)
1/4 cup water
TONS of ice
I smush (is "smush" a word?) this as I go. Oh so refreshing.
Enjoy, be kind to yourself (I need this advice this week). See ya soon!

Happy Saturday, I Think.
So my Saturday started at 3:45am. Not impressed. I go through bouts of insomnia and was quite proud to have worked myself up to 5 hours of sleep per night but alas, it was short lived. The rest of the day should be quite interesting!!
Guests tomorrow so house to clean, football practice today followed by a football jamboree - give me strength. Thinking I need a smoothie that's not only going to fill me but give me some much needed energy!
Introducing Citrus Surprise
1 whole orange, peeled
1 whole lemon, peeled
1 whole lime, peeled
1 Tbsp honey
1 Tbsp flax seed
1 cup water or coconut water (I used coconut for some much needed potassium and hydration)
1/2 cup unsweetened orange juice
This recipe is good for two large servings with minimal points so enjoy!!
Here's hoping for a (at least somewhat) sunny day and a rockin' Jamboree!

At Last...It's Friday!
Today brings an end to "hell week" - you know that week where you are completely overbooked and everyone seems to want a part of you? That was this past week. I was going to count all the appointments we had to squeeze in but I got scared, lol. So let's just say overbooked, shall we?
I am happy though and the last appointment of the day is with a wonderful, new client. She's just lovely and we are off to a great start with the planning of her home. Love it! Hectic weekend begins Saturday but it includes football, friends and family and let's face, you can't be that!
Despite this hectic schedule I HAVE been tracking all my food and have, so far, been doing a great job! I'm always nervous when the weekends hit as meals aren't always so well planned but I'm determined (if nothing else, lol)
So what's on the menu?
Coconut Chai Smoothie
1 cup coconut milk
1/2 teaspoon cinnamon
1/2 teaspoon Garam Masala
1 tablespoon honey
1 cup ice or 1 frozen banana (depending on your points - I had my smoothie without it)
100g Liberty coconut Greek Yogurt
Decadent? Yup
Delicious? Yup
Hittin' the Beach? Nope, but wish I could!
Enjoy and be kind to yourself!

Peach Melba
Ahhhhh, a conversation with the Boo (aka my 12-yr-old) sure can warm the heart. Not overly hungry for lunch so he asked for a smoothie instead. Love it!
His choice for today: 100g pineapple greek yogurt, 1 cup frozen blueberries, 1/2 cup strawberries, 1 whole lemon, water.
I'm in heaven - he's getting in some protein and lots of fruity goodness. But I don't fool myself...he'll be back in the fridge soon enough, lol.
I've been sipping cucumber lemonade all morning. It's addictive and refreshing. Not a whole lot of goodness, I know but it sure beats my staple, Diet Pepsi.
SO! Have you indulged in peaches yet? I picked some up this week. Not bad, not great but smoothie worthy.
Peach Melba
1 Whole peach, pitted & chopped
1/4 cup frozen raspberries
100g Oikos peach and mango Greek yogurt
1 tsp. vanilla
1 Tbsp. lemon juice
1 cup ice
Low-fat milk, few tablespoons
I started by blending the peach and yogurt with a little bit of milk until foamy. Add the vanilla, raspberries and ice then blend again. This comes out quite nicely and is not your typical smoothie consistency.
Be safe, be kind, be blendin' folks!

Frightening...
I was hit by the most painful migraine I have EVER experienced last night. The type that makes you wish you could take a gun to your head to end the pain. It was blinding. It was acute. It was numbing. It was the worse pain I could imagine. And of course it hit while I was driving. The lights from the other cars were unbearable as I tried to apply pressure to the top of my head, praying that I wouldn't pass out from the pain. Sweat ran down my face, my back and by the time I made it home my clothing was soaked with sweat. I barely made it into the house before the pain, so intense, made me physically ill. My wonderful husband held my hair and wrapped cold clothes around my neck but it just would not let go. Not something I look forward to ever repeating...Thankfully this morning was business as usual and I have been racking my brain trying to figure out what may have triggered it. No luck yet.
Sadly, the last thing I had eaten before being sick was cooked Kale. I loved cooked Kale. Past tense.
Having been sick, I can no longer look at it, smell it. I am really hoping that will pass. I loved Kale.
So you may find it somewhat ironic that I'm posting a Strawberry Kale smoothie. I seem to be able to stomach it in it's raw form so far...so I can still reap its benefits.
Strawberry/Kale Smoothie
1 cup coconut milk
1 cup frozen strawberries
1 large handful raw kale
100g plain or vanilla yogurt
1 tsp honey
Ice, as needed
I started by blending the kale with the milk to ensure it blended smoothly before adding the other ingredients. The color is funky, so be warned. But really, really good.

BEST.DAY!
Oh my! What a fantabulous day! I just scored another fabulous interior design job not far from home! A beautiful home already - they are making it bigger and revamping! I CANNOT WAIT to get started, tomorrow! WOOT!
Ok, I HAVE TO ASK! Did you try the Chai smoothie? OH.MY. I am now happily addicted :-) BeSt TaStE eVeR! Do I sound excited today? Well, I am.
I was soooo happy I had my nose re-pierced! Hurt like the dickens the 1st time, then I lost it and the hole closed immediately. The whole thing was so awful it was enough to turn me off the whole thing forever...or so I thought. A friend of mine from Carissima Mobile Spa does it with a gun, just like the ears. NO pain!
I am one happy, happy camper today. Just sayin'!!
Playin' with pears tomorrow - check it out!
Pear Deeelight!
1 whole pear (skin, core, it's all good!)
1 inch fresh ginger
100g vanilla Greek yogurt
1 cup skim milk
Ice
Blend, blend, blend away!
My Boo is back from his grad trip tomorrow. How I missed him! Busy times ahead with football and his grad. Need.To.Stay.On.Track!
Be kind everyone xo

Monday, Monday...
Monday Monday, so good to me,
Monday Monday, it was all I hoped it would be - The Mamas and The Papas
Hello Smoothie Lovers! How did it go this weekend? One day of sun and one miserable day of rain here. Not nice of Mother Nature on Father's Day but what can ya do? We enjoyed a homemade breakfast together but then it was back to work!
It's our wedding anniversary today too. Thankfully someone reminded us. Yah. Really. We don't really celebrate our wedding anniversary - now that's not as bad as it sounds because we DO celebrate our "together" day. Our "together" day is what's most important to us. Yes, even more important 6than the actual wedding. Crazy but true. So watch out on October 26th - then we'll celebrate.
So we pondered butters this weekend. Packed with protein, in moderation, this is pure goodness. Nut butters. Nutritious ~ Filling ~ Delicious....Try these on for size. You will want to go easy when adding nuts to your smoothie. Raw almonds, cashews or macadamia nuts are great options if you have a high-speed blender that can powder them prior to mixing your smoothie. Alternately, a tablespoon or two of almond, cashew or peanut butter can add a nutty flavor to a banana smoothie. Sunflower and pumpkin seeds are also great choices as well as hemp seeds, which are also high in protein.
Banana Walnut Smoothie
Ingredients
3/4 tsp freshly grated ginger
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
1/2 tsp freshly ground nutmeg
3 whole almonds, ground
1/8 tsp vanilla extract
This will be a do-over and over and over again for me. Not a meal by any stretch but definitely sit-on-the-sidelines and cheer worthy! WOOT!
Be safe, be kind and for goodness sakes, be yourself cause that's your perfect you! Have a great day folks!

1/4 cup chopped walnuts
1 tbsp honey
1/2 tsp cinnamon
1 tsp toasted wheat germ (optional)
Blend the walnuts prior to blending the rest of the ingredients. This is not overly sweet so you may feel it necessary to add additional sweetener. I liked it as is :-)

3 pitted dates
3/4 cup unsweetened almond milk

Status Quo
Weight remained status quo this week :-) Maintenance, maintenance, maintenance. It's all good.
My refreshing "treat" this morning was indeed a great breakfast alternative. Tasty and filling!
Fruit & Oatmeal
100g Liberty Greek Pineapple Yogurt
1/2 green apple
1 cup coconut milk
1/4 cup oatmeal
1 whole orange, peeled
Ice, as needed
I used about 5 ice cubes and the consistency was just perfect. I'll be playing with nut butters on Sunday so I hope to have a few new recipes to share. Packed with protein - nuts are a good thing.
Enjoy the sun, we never know how long it will last ;-) Be kind to yourselves!

Good To Be Back!
Been staying REALLY on track and I can feel it! It's a great feeling! I'm considering a "Raw Challenge" although I have to think about it, lol. All raw, all whole, no cooking for an entire week. YIKES! But I think I can do it! Maybe. Stay tuned.
I promised you the recipe for the fat burning soup so here it is. It was given to me so I cannot claim it as my own but I cannot say enough good things about it. It is DELICIOUS!
DAHL SOUP
Cooking Spray
1 cup finely chopped yellow onion
2 clove garlic
1 tbsp chopped fresh ginger
4 cups vegetable or chicken broth
1 cup dried red or green lentils - rinsed and picked
1 tsp cumin
1 tsp coriander
1/4 tsp cardamon
1/4 tsp cinnamon
1/4 tsp cayenne
1 dried hot chili pepper
Heat cooking spray in large pot.
Add onions, garlic and ginger and cook until translucent.
Add broth, lentils and spices and bring to a boil, then reduce heat and let simmer for 45 min.
After simmering for 45 minutes, I added another 4 cups of broth and doubled the spices (except the chili pepper) and let simmer for another hour or so. I added more cayenne than recipe calls for - love spicy!
It gets even better as leftovers :-D
3 points per 1 cup.
I kid you not! I lose weight every time I eat this soup. It's magical ;-)
Love Celery? I do!! Check this out!
EAT, CRUNCH, ENJOY!
Have a great day folks! Be kind to yourselves xo

Nightcap
With plenty of points left in my day an additional treat was in order - this was easy to make and transport to the football field so I knew it would be a winner!
Blueberry Greens
1 cup frozen blueberries
1 stalk celery, finely chopped
1 handful spinach
1 whole lemon, peeled
1 sweetener of your choice
1 cup water
Ice, as needed
Note: Be sure to chop your celery first as not all blenders are created equal. This has a cool, refreshing taste and the greens add a really nice tang.
Enjoy!
I'll be making some fantastic fat-burning soup today. No joke! This stuff is fabulous! Low in points, really, really high in flavor - you'll love it! Watch for the recipe!

Bam!
Whoda thunk it? After last week's disastrous torture of the body it would appear I have lost .4lbs regardless. Go figure.
Computer is back on track (well, this one anyways), stress level has descended (somewhat) and I'm working on a new marketing plan soooo...this week should be slow and steady. Woot!
Relatively sunny here today - a lovely change of pace so I thought we'd bring in more sunshine!
This is sorta, kinda, almost, not quite, but just about the same as the famous Orange Julius. Let me know your thoughts when you're done :-)
Fresh Orange Smoothie Recipe
Ingredients:
Combine all ingredients in a blender, and blend until smooth. Add more ice if you would like. For an icier treat, throw the oranges in the freezer for 30 mins. Icy cool but not yet frozen through.
Have a great folks! Be kind to yourself!

Epic...
As in epic fail. Long moment of weakness. Wednesday afternoon was a complete write-off for me. Not happy. I let the emotions get the best of me and there were many. Up, down, all around then back again. My choices were not good ones. Between the computer (still not resolved), school events and just a general malaise it all became too much. But I'm acknowledging it and moving on. I can do that, right? Today is a new day.
So we'll handle each hurdle, one at a time (what else can we do?) and see ourselves through. Let's embrace the power of the berry today...

Cherry-Berry Smoothie
1/2 large banana

1 cup frozen cherries
1 sweetener of choice
1 tbsp of lemon juice
1 1/2 cups water
3-6 ice cubes
Blend on low for 10-20 seconds. Then increase the speed to medium/high until smooth.
I hope this spreads a little sunshine your way - be kind to yourselves, don't do what I did, lol. Have a great day folks!

Hell Hath No Fury...
Like a computer virus! Still struggling here but hoping to have it fixed soon. It was a doozy! It even wiped out my security features - go figure. Amazing I've been able to stay on track but I have! Barely. Can't say the temptation hasn't been there but I'm managing!
Two recipes for you today for being soooo patient with me (and my computer woes)
Mochachinno!
Throw out that leftover coffee no more! Keep those last dredges of coffee from the pot for this great, cool smoothie. Freeze your leftovers in ice cube trays and you're good to go! NOWHERE near the points from a Timmies Ice Cap so enjoy all day long!
6-8 coffee cubes
1 cup skim milk or coconut or almond milk
1 TBSP cocoa
Sweetener of your choice (you will need it if you like your coffee on the sweet side)
Blend and enjoy! If your program allows it, add 1 Tbsp of coffee cream for a creamier taste. I don't need it but you may prefer it that way :-)
Pretty Green
1 large Granny Smith Apple, chopped
100g Liberty Greek Apple yogurt
1 lime, peeled and chopped
1 handful of spinach or romaine lettuce
1 cup coconut water
Ice, as needed
This was not only very refreshing but a filling breakfast too.
We're off again - we've just opened a new division of PHANCY so we're quite busy! Not having all the computers up and running does not help but I'm sure our ancestors did fine running their businesses without all the gadgets ;-) Although I can't do it for long, lol.
Stay safe everyone, smile and have a great day!

Two! Two!
Had a sneaking suspicion my potassium was a little low (muscle aches and cramps) so in a effort to handle it naturally I whipped up this baby;
1 whole banana (fresh or frozen) Potassium rich
1 cup coconut water Yup, potassium rich
1 whole orange
Ice, ice baby (K, just wanted to sing that)
Taste great and good for you. I'll give it a try every morning for the next few days and assess the results.
Lunch on the run was required yesterday and it had to be filling as I did not know what time I'd get in. Turns out it was late :-S
1 cup spinach
1/2 haas avocado
1 stalk celery
100g low fat cottage cheese
Water
Ice
Don't need to tell you how ugly this turned out. Pretty bad but the taste was amazing and it did the trick. Try it!

Canta-Loopy!
Bought myself a HUGE Cantaloupe yesterday for $ 2! WOOT! Which of course led to this (can't be simpler, really)...
Canta-Loopy (loopy cause it lacks difficulty and is just so crazy easy)
1.5 cups cantaloupe
.5 cups Almond milk
.5 cups Coconut mill
100g coconut Greek yogourt
Lotsa ice!
Delicioso! Also reminded me that I need groceries, lol cause we're running low.
Enjoy it! Easy, delicious and refreshing (which is odd cause it's pretty darn cold today)!
On the run...again...Vaudreuil done, Montreal ongoing and St-Laz tonight - that's the PHANCY way!

Mornin' Sourpuss!
Citrus, beautiful citrus. Citrus anything makes me happy! NOTHING beats the smell of citrus. An instant mood lifter for me!
Working from home this a.m. then I'm off site for the rest of the day so for now, orange sherbet and lemongrass candles are burning and I'm (semi) focused on designing a new living room! Blog first, living room soon.
This morning's treat;
Sourpuss
I'm not kidding when I say it's sour so if you're not a sour fan, this is not for you!
1 whole lemon, peeled
1 whole lime, peeled
1/2 Granny Smith Apple
3 fresh mint leaves

Now back to that living room for me... Have a great day folks!
Working from home this a.m. then I'm off site for the rest of the day so for now, orange sherbet and lemongrass candles are burning and I'm (semi) focused on designing a new living room! Blog first, living room soon.
This morning's treat;
Sourpuss
I'm not kidding when I say it's sour so if you're not a sour fan, this is not for you!
1 whole lemon, peeled
1 whole lime, peeled
1/2 Granny Smith Apple
3 fresh mint leaves
100g lemon yogurt
Ice, as needed
1 Tbsp. honey (optional, I don't use)

OUF!
That's all I have to say.
Ok, not really. I also need to have my head examined. Literally. Back-to-back migraines have kept me off track but I'm hoping it's weather/allergy/stress related as those can be managed.
I'm going to flush my body completely tomorrow - all smoothies, all day. Kick-start the week!
Blueberry Almond
3/4 cup frozen blueberries
1 cup almond milk
Ice, as needed
This blended beauty is packed with vitamin C, vitamin E and chock full of antioxidants
Apple Beet
1 green apple
2 large beets
1 cup coconut water
Ice, as needed
Sounds weird, I know. But it's really good and it's really nutritious and the coconut water is fabulous for hydration.
I'm on the road most of the day so this is the perfect time to flush and kick-start.
Bear with me - I'll be back once this headache stops kickin' my butt! Smoothies for everyone!

Power Breakfast
On the run again...I KNOW! You'd think I'd be a wee little thing with all the running I do. But I think my mind does most of the running so maybe I have a really cute brain? Heh heh!
It's power breakfast day! And by the way I'm down .8lbs. After the 2lb gain last week, I'll take it.
Power Breakie:
1 Moroccan Bread (CAN'T say enough awesome things about this bread!) - 2 pts
1 Tbsp. peanut butter - 2 pts
1 Tbsp. flax seed - .9 pts
1 small banana - 2pts
Yeah, I know that seems high for breakfast but it will keep me going until 2:00pm then I can indulge in this...
Lemon Love
100g Liberty Lemon Greek Yogurt
1/2 lemon
1/2 green apple
1/2 cup water
Ice, as needed
Blend and enjoy this sour puss blend! Love it!
Finishing up my week with this baby (I love it!)
then it's more running around (FOOTBALL! WOOT!). Playing on two teams is no easy feat but my little guy loves it so that's all that matters!

Elimination Chamber - LOL!
It sure feels good to be back on track! Kinda makes you wonder why you fall off the wagon when being healthy feels sooooo good?!
Doesn't take long either. Just knowing my body was taking in good, healthy food made me feel better within a matter of hours. Love the way our brains and bodies work:-)
That being said, eating crap can lead to...well, not crapping, lol. To get your plumbing back in order, I highly recommend the Elimination Chamber. Invented by yours truly, it works really well and despite the contents, is absolutely delicious!
Elimination Chamber
6 dates
4 whole figs
1 cup Silk almond milk
2 Tbsp. flax seed
1 Tbsp. cocoa
Ice, as needed
Blend the ingredients until pulverised and enjoy!
This should get everything "moving" and reset your system.
Smile at everyone you meet today.
Some will think you're crazy but it could also be the only smile someone else sees today. Be kind to yourself!

Comfort In A Cup...
Think I've spoken before about my obsession for soup? Seriously.Obsessed. One of my favorite things. That and breakfast for dinner. The world would be a better place if we had breakfast for dinner every night :-)
Makes me crave eggs and sausage....
Ok, so the soup. The soup obsession. I will start posting more of those recipes as well as they are low-fat, high fibre and oh so delicious. Try this one on for size. Could not be simpler!
Hearty White Bean Soup
4 cups veggie or chicken stock
4 cups white beans (I used dried beans and soaked them overnight.)
3 cloves garlic
6 organic carrots, chopped in small pieces
6 celery stalks, chopped in small pieces
1 medium yellow onion, diced
1/2 T olive oil or cooking spray
1 T parsley
1/2 tsp sage
1/2 tsp thyme
Salt to taste
Put everything in a crock pot, turn on low, and let the contents slowly get warm. Cook 6-8 hours and enjoy!
